Ideas for VERY SIMPLE seasonings for oriental recipes?
I work at a wilderness based boarding school making menu’s. The kids go out camping most weekends, and for long trips 4 times a year. They want to get away from using the seasoning packets, but they need stuff that can be applied to most oriental meals. It would be confusing to have a whole list of different spices every week, and they’d never pay attention to it. Is there a list of spices that can be applied to a variety of different oriental meals that I can just add one or two spices when I want a different meal (for instance, kung pao, stir fry, etc.)? I’m thinking along the lines of – using italian food as an example – oregano, rosemary, thyme, basil, garlic…stuff that goes well in most italian meals, and that you can just add different ingredients to make pizza or lasagna, etc.
I also need stuff that’s easy to find at regular grocery stores, and non-perishable (or stuff that won’t perish in the hot sun or freezing cold in 10 days).
Thanks in advance.
I’m impressed with your question. You mentioned kung pao which can tend to be a bit on the hot side (for some people’s taste). The tough thing here is, much of the flavor of Oriental cuisine comes from oils as well as spices, like peanut, sesame and chili oils, respectively. That said, soy sauce, garlic (powder will do in the context you mentioned), chili powder, red pepper, onion powder, ginger powder or root (you can freeze fresh ginger root and it will still be great, however I am unsure about how long it would last in heat).
