Super Tasty and spicy chicken noodle salad
* 70g coarse or smooth peanut butter
* 20ml Kikkoman soy sauce
* 3 tablespoons lime juice
1 teaspoon powdered sugar
* 3 tablespoons toasted sesame oil
* 1 Thai chile (Or to taste), finely chopped
* ½ clove garlic, finely chopped
* 2 cooked chicken breasts, skinned
For noodle salad
* 1 red pepper, quartered and seeded
* ¼ cucumber, peeled
* 1 large carrot, peeled
* 2 scallions, trimmed
* Large handful of cilantro leaves
* 125 g rice noodles
* 2 tbsp Thai fish sauce
Start by making the peanut sauce. Place peanut butter, soy sauce, 1 tablespoon lemon juice, powdered sugar, 1 tablespoon toasted sesame oil, pepper and garlic in a food processor with 3 tablespoons cold water. Puree and pour into a bowl. Finely shred the breasts chicken and mix in the dressing room. Set aside. Finely slice the red pepper, cucumber, carrots and onions.
