French press coffee is gross – what am I doing wrong?

We typically only use it when we’re camping or in a hotel/motel so I’m used to my good ol’ coffee maker.

It’s a metal, stainless steel press & the coffee is bitter & REALLY strong. But when I make it the same way in my glass french press – this doesn’t happen. We grind our own beans before leaving home.

We HAVE to use the metal press because it’s larger for the two of us on trips.

Glass or steel really doesn’t matter; I have a moka pot that I’d use camping since I could put it right over a fire.

First of all, how are you heating the water?
If you boil the water in the press over the fire it will taste bitter (coffee should never be boiled). If you want to use the press to heat the water, add the coffee after the water has boiled & you’ve taken the pot off the heat.

How fine is the grind & how much are you using?
The grind should be very coarse. If it’s too fine it will over extract & become bitter.
You should use 2Tbsp of coffee grounds per 6oz of water and let it steep for 4 minutes. Too long and it will over extract & be bitter. If it’s too strong reduce the steeping time by 15-30 seconds; this will reduce the flavors extracted and might be more to your liking.

A french press makes much richer coffee than a auto-drip machine. If you’re used to mild drip coffee the press may just be more flavor than you’re used to. When I can’t bring my grinder with me I grind individual doses into small spice tins and wrap them in cling wrap to reduce oxidation and make measuring it out easier.
